Easy Sausage Sandwich (and budget stretcher)
As a kid, I used to love going to local fairs and carnivals. Loved the cotton candy, loved the kettle corn – and loved those overstuffed sausage sandwiches!
Today, you can still grab a package of sausage at your local grocery store. Not only is there beef and pork, but turkey and chicken that offer lower fat/calories! Sausage still makes a great summer sandwich, but it can also be a meal stretcher.
Below is the recipe for this great summer sandwich and also recipes/ideas to use it as a meal stretcher:
SUMMER SAUSAGE SANDWICH:
sub, club or hoagie rolls (toasted or not)
1 package (12 oz.) of sausage (turkey, chicken, pork or beef – you choose)
1 green pepper (sliced)
1 red pepper (sliced)
1 onion (sliced)
makes 2-4 sandwiches (depending on the size of your buns!)
NOTE: If you love peppers and onions, increase them to suit your personal taste. See ideas below for any leftovers you may have.
Cut sausage links to fit whatever buns you’re using. In one pan, sauté the sausage (using cooking spray or olive oil) until thoroughly cooked. In a separate pan coated with cooking spray or olive oil, sauté together the peppers and onions until tender and set aside. When the sausages are done, place them in the buns and top them with a generous portion of the mixed vegetables. Options: Add Dijon mustard and/or ketchup.
TIP: Heat up fresh sauerkraut and add to the sausage sandwich instead of peppers/onions OR in addition to the peppers/onions.
SAUSAGE BREAKFAST IDEAS: Heat up leftover cooked sausage and serve with eggs (instead of bacon). Use leftover peppers and onions in an omelet or mix into home fries. Dice leftover sausage and add to your favorite omelet.
OTHER MEAL-STRETCHING USES FOR SAUSAGE:
– Add cooked round slices of sausage to bean soup or vegetable soup
– Add cooked sausage to red beans and rice
– Add cooked sausage to canned pinto or baked beans to kick up the flavor
