E-Z Maple Syrup Baked Sweet Potatoes
Sweet potatoes are not only delicious and easy to make, but are loaded with plenty of good stuff such as: beta carotene, Vitamins A, C, B6, plus potassium and more! Fall and winter are the perfect times to crank up the oven for this easy side dish to go with just about any meal!
– Set oven to 375 degrees. While oven is pre-heating:
– Wash whole, fresh sweet potatoes (leave skins on), then pat dry with paper towel. Next stab them with a knife in several places to help ensure they bake all the way through. Wrap each potato in aluminum foil.
– Place foiled potatoes on an oven-proof aluminum or metal tray (to catch leaks – sometimes their juices seep out of the foil). Bake at 375 degrees until they are done – test them by opening the top of the foil and pricking them to the core to ensure they are baked all the way through the middle. Baking time is approx. 45-50 minutes, but will vary depending on the size of the potato and your oven.
– When potatoes are ready, give each individual their own baked potato and let them top it with the Maple Syrup Sauce recipe below.
MAPLE SYRUP SAUCE:
1 tablespoon of butter or margarine
4 tablespoons of maple syrup
1/2 tablespoon of brown sugar (light or dark)
a dash or two of black pepper
Optional (but recommended): a dash of cinnamon
serving size: 2-3 baked sweet potatoes
Warm up the Maple Syrup Sauce on low heat until butter is melted and sugar is dessolved. Serve the sauce warm over the sweet potatoes.
NOTE: Sweet potatoes are great just plain or with salt, pepper and/or butter or margarine – but the maple syrup, brown sugar and cinnamon give them an extra flair!
FREE-STYLE THE MAPLE SYRUP SAUCE YOUR WAY! Add more or less butter (or NO butter/margarine), more or less brown sugar (or leave it out completely) or top potatoes with only Maple Syrup (no butter or sugar)! Tailor the sauce to your own personal liking!
TIP: Sweet potatoes go great with store bought rotisserie chicken. Buy the chicken in advance and just warm it up when the sweet potatoes are almost done.
