E-Z Italian-Style Chicken Burgers
Here’s an easy, versatile recipe that’s pretty quick and doesn’t take a lot of effort. It’s Wonder Women’s Sixty’s Italian Chicken Burger, another free-style recipe from our kitchen. PLUS: any leftovers can be transformed into a totally different meal!
Free-style this recipe by tailoring it to your own personal taste. You can make the recipe as it OR increase or lower some of the ingredients such as the pesto, sun-dried tomatoes, onion, etc. You can increase the breadcrumbs to extend the recipe.
Wonder Women Sixty’s EZ Italian-Style Chicken Burgers:
In a large bowl, mix together:
1 lb. Ground chicken (can be all white meat or mixed)
3 tablespoons of store bought pesto
5 tablespoons of chopped sun-dried tomatoes in oil
½ cup of bread crumbs
½ of an onion, grated
1 egg white
1-1/2 teas. oregano
salt/pepper to taste
4-6 slices of Mozzarella cheese (whole or part-skim) – OPTIONAL
burger buns (choose your favorite)
Form into patties. Place the patties on a shallow metal tray or on heavy aluminum foil. Bake at 375 degrees until they are done – approx. 30 minutes, depending on how well-done you like your burgers (also depends on your oven). A FEW MINUTES BEFORE BURGERS ARE DONE: ADD THE CHEESE SLICES so they become slightly melted.
SERVE & ENJOY! Pairs well with a tossed salad.
LEFTOVERS: Leftover burgers can be chopped up and added into your favorite marinara sauce and served over your favorite pasta.
TIP: When making the burgers, make some of them meatballs. After the burgers and meatballs are done, cool off the meatballs and freeze them to use in the future for a meatball sub or over pasta with marinara sauce.
HEALTH BENEFIT: Chicken is more lean than beef. An egg white (as opposed to a whole egg), helps keep cholesterol down. Part-skim cheese or NO cheese at all, lightens up the fat and calories. Whole wheat buns or no bun at all keep it even healthier.
