Free-Style, Easy Tuna Salad

With the heat of summer rolling in, sometimes you just want something good and easy for lunch or dinner. Great news! Breaking out a can of tuna can help with that!

Below are free-style recipes for easy tuna salad and various ways to serve it. This tuna salad recipe is just a “base” recipe. Free-style the recipe to suit your own personal taste by tailoring each ingredient to your personal liking, i.e., MORE or LESS mayo, pickle relish, etc. …you get the idea!

EASY TUNA SALAD:

(1) 5 oz. Can of Solid White Albacore Tuna

2 or more tablespoons of your favorite mayo (tailor it to your personal taste)

2 tablespoons of sweet pickle relish (add more or less to your personal taste)

one or two squeezes of fresh lemon juice (to bring out the flavor)

a dash or two of black pepper

Optional: a dash or two of dill weed

Optional: a tablespoon of diced onions

Mix the ingredients above together and serve on a baguette or your favorite bread (toasted or not toasted), with or without lettuce. tomato and/or avocado slices. OR: Serve it over mixed greens or over your favorite lettuce and skip the bread! OR: Stuff the tuna salad into a wrap with some lettuce. Optional: add sliced onions, tomato and/or avocado slices.

STUFFED TUNA TOMATOES

Cut the top off 1 or 2 large tomatoes and scoop out the inside flesh so you have a hallow tomato shell. Then mix the tomato flesh into the Tuna Salad recipe above. Stuff the mixture back into the hallowed tomatoes. Serve the stuffed tomatoes and tomato lids over a bed of mixed greens drizzled with balsamic vinaigrette or your favorite salad dressing.

OLD-SCHOOL OPEN FACE TUNA SANDWICHES

Make the tuna salad recipe above and spread it over one or two slices of your favorite THICK bread. Top with a slice of cheese or shredded cheese such as cheddar. Toast or bake until the cheese is melted. Serve.
