EZ Black Bean Dip
Here’s a fast and easy black bean dip perfect for informal gatherings, as a snack or for Game Day:
(1) 15.2 oz. Can of black beans – thoroughly drained and rinsed
1/4 cup of Light Sour Cream
1/3 cup of red salsa (plus an extra 1/3 or 1/2 cup for topping)
1/3 to ½ cup of Light shredded cheddar cheese
a dash of black pepper (to taste)
In a medium bowl: smash/mash the black beans (making them a chunky bean paste). Mix in the sour cream and 1/3 cup of red salsa. Season to taste with black pepper. Top with an additional 1/3 to ½ cup of red salsa (you decide to your liking), top with shredded cheddar cheese. Optional: Add chopped scallions on top of the cheese. Chill and serve with tortilla chips. Serves approx. 4.
This is another one of Wonder Women Sixty’s “free-style” recipes. So tailor this dip to fit your personal preferences. Add more or less salsa or cheese, add other toppers such as black olives, sweet and hot peppers or anything else you can think of – get creative! This is my own “base” recipe, but “free-style” it and make it your own! You can also use regular cheddar cheese and sour cream instead of “Light” – but this recipe tastes great with the “lighter” variations and keeps it on the healthier side.
EZ GAME DAY IDEA: Want to serve something really easy to go with those wings and/or hot dogs, etc? Go old school. Crank up the crock pot and add several cans of your favorite baked beans. Keep the crock pot on low and let folks help themselves throughout the game.
