EZ Chicken or Turkey Meatloaf

Meatloaf is an easy meal for you and your family. Here’s the basic recipe to tailor to your own personal taste:

EZ TURKEY OR CHICKEN MEATLOAF:

1 lb. of ground chicken or turkey

1 egg white

3 tablespoons of jarred pesto in oil

½ of a medium onion, chopped or grated

2 to 3 slices of white, wheat or other bread bread grated or finely chopped into breadcrumbs

salt/pepper to taste

Optional: 2-3 tablespoon of sun-dried tomatoes in oil, chopped

Optional: 1 or 2 grated carrots

Mix the above ingredients together. Bake the meatloaf at 375 degrees until thoroughly cooked (approx. half an hour or more depending on your oven temperature). APPROX. 15 MINUTES BEFORE THE MEATLOAF IS COOKED THROUGH: Spread spread a generous layer of your favorite marina sauce over the top of the meatloaf. Optional: Top with shredded Mozzarella or Parmesan cheese. Continue baking until meat is thoroughly cooked and marinara/cheese is hot.

OR: Instead of topping meatloaf with marina sauce, spread a generous layer of your favorite chicken or turkey gravy over the meatloaf. Continue baking until meat is thoroughly cooked and gravy is hot.

Meatloaf is a great way to stretch a meal. By using ground turkey or chicken instead of beef and an egg white (as opposed to a whole egg), you’re also cutting calories/fat.

Great with mashed potatoes, sweet potatoes or FOIL BAKED potatoes and perhaps a side of steamed broccoli or tossed salad.

TIP: Got leftover meatloaf? Chop it up and add it to marina or your favorite spaghetti sauce and serve over pasta.
