E-Z Crusty Bread with Ricotta Cheese Blend
Keep appetizers or snacks super easy especially during the heat of summer. Serve this as a standalone or with your favorite soup or salad.
MIX:
15 oz. Ricotta cheese (part skim or whole)
1 tablespoon dried dill weed
1 teaspoon oregano
2 tablespoons of chopped chives (substitute: chopped scallions)
salt/pepper to taste
ADD: the juice from l/2 of a fresh lemon to the mixture
Brush thick crusty bread with olive oil (or olive oil laced with garlic) then spread the mixture over the bread and top with fresh, sliced radishes or cucumber slices. A mix of radishes AND cucumbers also go well together. Free-style it to your personal liking by adding more or less lemon juice or pumping up the herbs.
This recipe lends itself to other possibilities using the Ricotta Mixture as a base. Consider topping the mixture with fresh tomato slices and/or your favorite olives.
