EZ Smoked Tinned Trout Recipes

Tinned Trout. Sounds boring – right? WRONG! There’s nothing boring about a small tin of smoked trout. You can make an easy lunch or dinner salad for 1-2 people with one tin. Smoked tinned trout also makes a quick and EZ appetizer (think unexpected guests) or afternoon snack. You can also substitute pre-packaged refrigerated smoked trout for tin trout, but tin trout will keep longer in your pantry.

Trout is an excellent source of vitamin B12. That’s one of the reasons a friend of mine who is an avid outdoorsman, tosses it in his backpack and eats it right out of the can when he’s hiking.

EZ SMOKED TROUT SALAD

– 3 to 5 oz. Of Smoked Tinned Trout (or buy pre-packaged fresh smoked trout, remove skin)

Note: If using tinned trout, lightly drain the trout before adding it to salad.

– mixed greens (for 1-2 people)

– l large cooked potato with skin on or off (chilled) and then cubed

– 1 to 1 ½ cups of cooked string beans (chilled)

– your favorite balsamic vinaigrette dressing

– Optional: top with sliced raw almonds or pecans

Mix the above ingredients together. FREE-STYLE IT: It’s up to you how much dressing you prefer. If you like a lot of trout, double the amount, same with chilled green beans and potatoes.

SMOKED TROUT SNACK/APPETIZER:

I like to keep this recipe in my fridge for a mid-afternoon pick-me-up snack. The ingredients are also easy to keep on hand for when unexpected guests show up.

MIX:  3 to 5 oz. of tinned smoked trout or pre-packaged fresh smoked trout with 8 OZ. whipped cream cheese (or substitute light or regular cream cheese, but whipped is lighter).

Note:  If using tinned trout, add a little bit of the oil to the cream cheese…the more oil, the stronger the taste.  If you want a milder flavor, fully drain the tinned fish and discard the oil.

THEN MIX INTO THE CREAM CHEESE:

– 1 to 2 squeezes of fresh lemon

– 2 dashes of dill weed

– salt/pepper to taste

– OPTIONAL:  finely crushed almonds or pecans

CHILL for at least an hour.  Serves 5-10 as an appetizer.

FREE STYLE THIS RECIPE:  start with 2 to 4 oz. of trout, add more for a stronger flavor (or cutback trout for milder flavor).

SERVE WITH HEARTY WHOLE GRAIN OR WHEAT CRACKERS, OR TOASTED BAGUETTE ROUNDS.
