MORE GLORIOUS BEAN RECIPES – PERFECT FOR THOSE CHILLY DAYS!
Looking for ways to stretch the family food budget? Beans are not only inexpensive, but healthy – and so many varieties to choose from! Here are some more ideas for easy bean dishes. These are basic recipes and can easily be tailored to your own personal taste by adding more or less ingredients or extra ingredients.
PINTO BEANS SIDE DISH:
(1) 14 oz. Can of Pinto Beans
2-3 strips of cooked bacon, crumbled (can use turkey bacon also) or leftover cooked sausage
2-3 dashes of paprika
salt and pepper to taste
hot sauce to taste
Mix ingredients together and simmer until piping hot. Serve as a side dish to any meal or with nachos
serves 2 as a side dish.
FORGOTTEN LIMA BEANS:
Super healthy, but often overlooked, it doesn’t get much easier than this:
(1) bag of frozen or canned lima beans
Cook Lima beans per directions and drain.
Optional: add bacon bits
When Lima beans are done: drizzle fresh lemon juice, then add salt, pepper and butter to taste. Serve as a side dish.
RED BEANS AND RICE:
(1) 15 oz. can of kidney bean (drained)
approx. 4-6 oz. cooked sausage (turkey, chicken or beef), sliced into rounds
(1) bunch of scallions (green onions) chopped, including some of the green stem
1 teaspoon of oregano
1 teaspoon of dried basil
3 tablespoons of red wine vinegar
½ cup of water
Season with Cajun hot sauce or Cajun spices to taste
Simmer ingredients in a large saucepan for at least an hour on low heat to blend the flavors of the ingredients (add more water if needed, while simmering). Serve the red beans over plain white or brown rice. Serves 2-3.
