EZ Free-Style Vegetable Casserole

It doesn’t get much easier than this: 4 Main ingredients all mixed together and baked in a casserole dish! Plus it’s super versatile! This basic recipe is budget friendly and is great just the way it is – OR use your own imagination and get creative but “free-styling” it “your” way. This casserole can be the MAIN dish or a SIDE dish.

Fast & Easy Vegetable Casserole:

(1 ) 10.5 can of Cream of Potato Soup (such as Campbell’s)

(1) 16 oz. Bag of Mixed Frozen Vegetables, such as a mix of: corn, carrots, peas, green beans

3 /4 cup of Skim milk or whole milk

(1)  6 oz. Can of Crispy Fried Onions (such as French’s)

OPTIONAL: a dash or 2 of Worcestershire Sauce OR Hot Sauce

Cook the frozen vegetables according to package and drain. In a bowl: Mix the Vegetables, Soup and Milk together. Then mix in approx. half of the Crispy Onions. Season with salt, pepper. Pour into a casserole dish (8” x 8” x 2-1/2″ deep, 9” x 5 l/2” x 3” deep OR A SIMILAR SIZE).

Bake at 350 degrees for approx. 30 minutes until thoroughly heated. The timing will depend on your own oven temperature and the size of your casserole dish (more shallow dishes usually take a little less time). Stir once while it’s baking (approx. 15 minutes).

When casserole is done, top it off with approx. half of the of remaining Crispy Fried Onions and bake for another 5 minutes. DONE!

Serves 2-4 people as a side dish or serves 2 as a main dish.

As I said, this recipe is great just the way it is, but if you want to jazz it up, here’s some ideas to get you started. This casserole is also a good way to use up leftover chicken or ham.

FREE STYLE IT “YOUR WAY” WITH THESE OTHER OPTIONS:

Add more or less Crispy Onions to this recipe.

Mix in leftover shredded or diced chicken or ham – if you add a lot of chicken or ham, add more Soup and Milk.

Mix in a tablespoon or 2 of cream or half and half for a more creamy texture.

Mix in shredded cheese such as cheddar.

Mix in herb seasonings to taste, such as: oregano, basil, dill.

Serve with warm biscuits or buns.
