SPINACH: Loaded with essential nutrients to support good health, make Popeye proud with these easy spinach recipes:
Easy spinach fratitta/one serving
Definition of frittata: A frittata is like an omelet, except it isn’t folded over like an omelet, it stays flat like a pancake.
In small cup or bowl, beat 1 egg with 1 tablespoon of milk, buttermilk or water, **½ teas. of lemon juice, salt/pepper to taste. Note: the more you beat the egg mixture, the “fluffier” it will get.
In a small 6 ½” to 7” skillet:
Saute’ in olive oil: 2 sliced mushrooms and approx. 6 fresh spinach leaves.
When mushrooms and spinach are tender and wilted, add the egg mixture and top with a tablespoon feta or mozzarella cheese. Cook over low to med. Heat until egg mixture is cooked through, flipping once.
Note: for a healthier spin, use low-fat cheese and substitute two egg whites for the one egg, and it’s also good without cheese.
Serving for TWO: double the recipe and use an 8” skillet
EASY TIP: Substitute spinach for lettuce in tacos or add spinach leaves to your sandwiches in place of lettuce. Mix lettuce leaves in with your regular salad greens.
**SCRAMBLED EGG TIP: Want to bring out the flavor of your eggs or egg whites? Beat in a dash or two of lemon juice and a sprinkle of dill. I also like adding a splash of buttermilk if I have it on hand.
Spinach Salad/single serving:
Heaping handful of Fresh baby spinach leaves
1 to 2 slices of Fried Turkey or regular Bacon, crumbled (note: turkey bacon is healthier and tastes just as good)
One hardboiled egg OR two hard-boiled egg whites
Toss with your favorite Italian or vinaigrette dressing (I like the Olive Garden Signature Dressing found in the grocery stores.)
Orange Spinach Salad/single serving
1 handful of Fresh baby spinach leaves
Add some bib lettuce (or other mixed greens)
½ Avacado (sliced, diced or guacamole)
4 to 6 Orange segments (such as Clementines/mandarins) or diced mango
2 to 3 Slices of cooked chicken or salmon
3 to 4 pearl Tomatoes (or slices of regular tomatoes)
Drizzle ingredients with an orange or citrus vinaigrette dressing to taste
EASY SAUTEED SPINACH (2 servings)
Coat a large fry pan with cooking spray and approx. 1-2 tablespoon of olive oil
Add a pinch of garlic (optional) and approx. 6 to 10 sliced mushrooms and lightly saute’ until they just start to brown.
Add 4 to 5 handfuls of fresh baby spinach
Cover and saute’ on low heat until spinach is wilted.
Remove from heat, squeeze on lemon juice and salt/pepper to taste – serve warm
Note: If you don’t like mushrooms, leave them out.
